At Antenna Gin, our passion for crafting exceptional spirits begins in our bespoke 50-litre copper still, housed within our summer house distillery. This intimate space is where botanical alchemy comes to life, and each small batch of gin is carefully distilled with the utmost precision. Using a traditional method, we combine botanicals, alcohol, and water in the still to begin the journey of crafting our unique spirit. The copper, critical to the process, serves two key functions: it removes sulfur compounds produced during fermentation and enhances the flavor by allowing more delicate notes to shine through.
As the still is heated, the alcohol and volatile compounds in the botanicals vaporize. These vapors travel through the still’s neck and condensing coil, where they are cooled and converted back into liquid form. The precise interaction between copper and vapor ensures that only the purest heart cut is captured, discarding the less desirable heads and tails.
